Shrimp and White Mushrooms in Tomato Sauce and Coconut Milk

Ingredients:

  • (Red) Shrimps 16
  • White Mushrooms 8
  • Butter or Oil to saute Shrimps and Mushrooms
  • Chopped Tomatoes (Medium Size) 5
  • Tomato Puree  depends upon how thick you would like the sauce to be
  • Coconut Milk 200ml
  • Fish sauce 1 Tbsp
  • Honey 1/2 Tbsp
  • Salt to taste
  • Water 200ml
  • Chopped Red Onion (Large) 1
  • Garlic Paste 1 Tbsp
  • Ginger Paste 1 Tbsp
  • Garam Masala 1Tbsp
  • Turmeric 1/2 Tbsp
  • Cumin Seeds 1t
  • Mustard Seeds 1t
  • Bay leaves 2
  • Oil 3Tbsp

  • Coriander to garnish

Method

Prepare the sauce

  • Heat oil in a deep pan and roast Cumin Seeds, Mustard Seeds, Bay leaves
  • Add chopped onions and saute them until the onions become soft and translucent
  • Add chopped tomatoes, stir them until they become dry
  • Turn off the heat, add water, and blend the mixture in a food processor
  • Move the fine mixture into the pan, add coconut milk, fish sauce, tomato puree, honey, and salt
  • Simmer it until the sauce becomes the thick enough of your liking

Saute

  • In a separate pan, saute shrimps and mushrooms in turn using oil or butter (don't overdo)
  • Serve the sauce, and place shrimps and mushrooms on top of the sauce

Garnish

  • Garnish with coriander
