Fluffy Pancakes

Ingredients (batter for 16 pancakes)

  • All purpose flour 200gm
  • Sugar 20gm
  • Milk 200cc
  • Plain Yoghurt (not very thick) 150gm
  • Egg 2
  • Melted Butter 50gm
  • Baking Powder 10gm

Other Ingredients

  • Olive oil to grease the pan

Method

  • Whisk Sugar, Milk, Yoghurt. and Egg until they blend well
  • Add Flour and whisk again
  • Add melted butter and mix until a good batter is formed
  • Refrigerate the batter overnight
  • Heat a pan and grease the surface lightly with oil
  • Pour the batter with a ladle and spread it gently (a circle of less than 10cm diameter)
  • Heat should be low medium
  • Wait until you see bubbles on the surface
  • Turn it over and cook until the surface becomes golden brown
