Fluffy Pancakes
Ingredients (batter for 16 pancakes)
- All purpose flour 200gm
- Sugar 20gm
- Milk 200cc
- Plain Yoghurt (not very thick) 150gm
- Egg 2
- Melted Butter 50gm
- Baking Powder 10gm
Other Ingredients
- Olive oil to grease the pan
Method
- Whisk Sugar, Milk, Yoghurt. and Egg until they blend well
- Add Flour and whisk again
- Add melted butter and mix until a good batter is formed
- Refrigerate the batter overnight
- Heat a pan and grease the surface lightly with oil
- Pour the batter with a ladle and spread it gently (a circle of less than 10cm diameter)
- Heat should be low medium
- Wait until you see bubbles on the surface
- Turn it over and cook until the surface becomes golden brown
